Food: The Search For Great Curry -- Part 4 @ Man Wah Restaurant

Hi people, sorry, I am so hooked on Android app programming that ...

... other than, well, maybe... writing this blog and ...food!

Yeah, this is what I am doing every day these days, I learn, I program, I eat, I work and I sleep, for as long as my app is incomplete.

The Search For Great Curry -- Part 1 and 2 were disastrous, Part 3 was better but it came at a high price, literally, because I really cannot afford to have $70+ for a curry rice meal often, I needed a place more affordable to dine out at.

Back at my "canteen", Man Wah Restaurant has recently offered a few new choices on their menus, two of which are curry dishes. With such a good news, how can I not give it a go?

In fact, I did not just give it A go, I gave 7 in total -- 5 times for the beef and twice for the chicken in order to offer you my best comments on these dishes.

The overall presentation is above average if you compare it with the previous 3 restaurants' I have commented on. The rice is first moulded into a bowl before it gets on the plate. The curry came in a brand new large deep plate which is a nice touch that satisfies those who enjoy large portions. The curry is deep yellow with visible red chilli powder in it, making it look very pleasant to the eyes. The smell was slightly towards the strong side for a Hong Kong-style curry which is exactly the way I like it. The sauce is of a nice viscosity and is very consistent during all my visits.

The beef curry has the best consistency in the number of pieces of potato, but not for the tendons and meat. Sometimes I get more meat than tendons, sometimes just the opposite. I suppose if a special request is made, then you may get the perfect balance. I believe that the waitresses have adequate English to handle such request, as I have seen them handling similar requests in several occasions.

Both the meat and the tendons are tender and chewy enough respectively, and because there is curry sauce in them after every bite, you can tell the chef has at least tried to cook the meat and tendons in the curry for awhile, unlike some other restaurants which prefer a cook-separately-and-mix-later method, which I REALLY REALLY dislike!

The egg is an over-easy egg every time meaning that the quality control for the dish is pretty well done.

At the same price, we have the chicken curry with rice.

Basically using the same curry sauce but tastes slightly different due to the chicken oil. It is more oily than the beef one and thus also taste lighter, possibly due to the presence of chicken skin.

Other than the oiliness, and a little bit of dryness in the meat at times, it is pretty good.

If you also love curry, here's my dining tip! The way I like to eat the rice is to throw all the rice into the deep plate so that all the sauce are being absorbed by the rice and no sauce is wasted.

In summary, the look is pretty decent so ... 4 stars, but the portion of the meat is only half of what I have expected, so that costs them 1 star. The taste is very good but not amazing, so it's a 4. The smell was the best part of the dish, so definitely a 5. The meat and tendons are tender enough but the chicken is a little dry at times, so 4 stars for textures. Temperature-wise, there seems to be quite a difference in range. It has improved since my first experience but I can only give a 3 for now until I see a consistency in the hotness.

Cooking: Locky's Home-made Pork Chop Bun

If you are like me, can't stand the tastelessness of the pork chop buns of Chopsticks Kee, loves the one from Tai Lei Loi Kee in Macau but think it's too far away, then today's your lucky day! I'm gonna teach you how to make yourself a very very nice pork chop bun!

It's very easy to make so there is no need to panic!
Preparation before cooking

You'll need,

  • pork chops (8 pieces from Brazil for HK$22)
  • buns
  • white pepper
  • wine / Shaoxing rice wine
  • sugar / mirin
  • soy sauce
  • ginger


Step 1, tenderise both sides of the pork chop by poking it with double forks, or even better if you have a meat tenderiser that is NOT of a hammer shape, this is because a hammer-like tenderiser will flatten the meat and affecting the texture.

Step 2, grate the ginger with a grater if you have one, else, chop the ginger until it is very fine. Ginger helps to remove the unpleasant smell, if any due to freezing and defrosting, from the pork.

Step 3, half a cup of soy sauce for the saltiness, about two teaspoons of mirin / sugar for the balance, 1/4 of a cup of Shaoxing wine for the miraculous taste as well as the removal of icy smell, and finally about half a teaspoon of pepper to spice up the pork a little.

 Step 4, mix well, add a few more pokes with the fork if you want the marination to speed up.

Step 5, if you can afford the time, leave it in the fridge overnight. If not, leave it at room temperature for at least 2 hours.

Step 6, with a little oil, sear the pork chop with large flame for about 1 min on each side to lock the meat juice in, then switch to low flame for another minute on each side to make sure the pork is completely cooked because you don't want to have tapeworms inside you.

Learning Psychology & Opinions: Learning a New Language

The progress of writing Locky's English Playground Android app has been slow. There were a lot of troubles with the software and even with getting the Android examples to run. It took me almost two weeks searching and asking others how to get the examples to work. It was frustrating indeed, very much......

At times I thought, I just wanted to get the end result, just get someone to do it for me so that I do not have to do it myself, but had that really happened, there would have been no fun or satisfaction, no sense of accomplishment and the worst of all, no knowledge learnt.

So I continued to struggle with the codes -- literally struggling. However, I insist on reading up APIs and examples on my Note 2, watching YouTube tutorials, following some of them to code, trying hard to understand how the syntax (the grammar in computer science) works, etc. Not giving up a single bit.

The more I spend time on the Android / Java language, the more it comes to me. I can almost see me succeeding in getting my first program to actually run, and then... Force Close!!!

The program crashed even before it showed anything.

Painstaking hard work never guarantees success, it guarantees your improvement. If you do things with heart, you will succeed one day. A day not know when, but that day will arrive eventually. The key is not to lose hope and motivation.

Learning a programming language is very much the same as learning English, or any other languages. There are limitless objects (new words), syntax (grammar), hierarchy (sentence structures) and methods (idioms).

And there is always that one thing I hate the most -- debugging (error-checking). Tonnes of it! Like Chanel °5, it is inevitable. I must face it with courage if I want to master the language. No pain, no gain!

Ying Wa Girls' School is Tsang Tsz-kwan 

Take for example, Ying Wa Girls' School's top student Tsang Tsz-kwan, a girl with vision and hearing impairment as well as loss of sensitivity in her fingers. Despite her tragic disability, she did not give up herself and resorted to using her lips to read braille, spending at least twice as much time and effort as a normal person does to learn. How cool is that?

The Chinese has an excellent saying, "Take a look at others and then look at yourself", which carries a hidden meaning of "Observe others who are less fortunate than yourself and yet succeeded". If Tsz-kwan can obtain top grades, who with a healthy body still think they should complain about the difficulties in learning?

"Practice makes perfect" is such a cliché, but it's a fact. Wanna be better at something? Gotta work hard for it.

Vocabulary: All Sorts of Faces



There are so many human facial expressions, some really disgusts us, like the one on your boss' face, some are more adorable than the terms imply. I have a few words here maybe you would like to take a look.

I came across this term recently when I was reading on Flipboard and I must say I really like the production quality of this video!

An alternative to the above is a po-faced person, probably from pot or toilet according to Merriam-Webster dictionary.


Poker Face

Popularised by Lady Gaga's song, poker face is actually from the Poker game. Since it is a card game of mind and wit, it is very important for no one to figure out what you are thinking. The brilliant Warren Buffett is a big fan of this game too, do you think he is really good at hiding what his cards are?

Poker face is very similar to straight face, both are intentional and lacking in emotions, but the difference lies in the fact that straight face is related to something funny, whereas poker face isn't.

Nothing tricky about it, the term speaks for itself, but can it be funny in any ways?

When describing someone who is shameless about their bad-doings, this term has got to the best!

Cooking & Food: Battle Of The Udon -- Stage 1

I often have to face the challenge of buying the best udon, simply because it is so hard to tell! First and foremost, I need to try out all the udon I can get if I am ever willing to buy more than one at a time, which is always the reason I never get to find the answer. Second, if you ask your friends, your friends may give you some suggestions, but the suggestions are always subjective. I want a proof more scientific, I need evidence to convince myself, I must have the answer to this lingering question! Thus...

Ladies and Gentlemen, I hereby present to you, a simple yet scientific "Battle Of The Udon"! A series of udon challenge in which only one of the 4 udon will win and get to move on to the next round to challenge another 3.

In Stage 1, our four contestants from left to right, all bought from AEON / JUSCO Supermarket, are:
  • Menyuraku Sanuki Udon Noodle, 270g, HK$13.9
  • ACE Sanuki Udon, 400g, HK$19.9
  • Aoiyume Kobo Udon, 200g, HK$13.9
  • Topvalu Udon Noodle Sanuki, 500g, HK$21.9

I doubt that many people will take out their calculator like I do to calculate the price of each item to compare their cost. However, if you simply judge by the total price of a product, you can be really wrong!

In order to make the numbers look better though, I will change the unit to Price-Per-100g. Don't worry, I will do that for you.

It is very good to know that Topvalu Udon Noodle Sanuki s really living up to its name "Top Value"! ACE Sanuki Udon comes in 2nd. Aoiyume Kobo Udon is the most expensive, charging me a crazy HK$7-ish for 100g!!! That is 58.7% more costly than Topvalu!

Calm down, calm down Topvalu Udon Noodle Sanuki , let's not get too excited just yet, we are just going to get serious!

Round 2 of the battle is the "dry length" of udon noodle.

As consumer, for value or for preference, we will often notice the difference between the length of udon easily, especially when you hold two of them on hands at the same time, but exactly how long they are?

Because the length of each noodle even in the same pack will be in different length, we don't have to be too serious about it. But for our competition, we will need use this "dry length" as a control, let's just compare them anyway.

To be fair, I picked one noodle that is about the same length as their neighbouring noodle in the same pack, and measured them in length.

After measuring, the results are:
  • Menyuraku Sanuki Udon Noodle -- 20.4cm
  • ACE Sanuki Udon                       -- 24.4cm

Although we cannot say that having the longest in "dry-length" mean much, a longer noodle in packet does give consumer a feeling of better value-for-money. Since the longest one beats the 2nd one by a whole centimetre, ACE Sanuki Udon deserves the award as the Round 2 winner!

Round 3 of the battle is the cooking time of the udon noodle

This contributes to the amount of water absorption and thus affecting the elasticity, the bite, the taste of the udon and also ... the price you pay for gas.

However, this is not an easy test, because if I cooked the udon within a fixed time limit, it will mean that the udon might not be given enough time to absorb water, thus affecting their performance. After careful considerations, I decided to use the recommended time of cooking, taking the lower limit if a range is given, to allow each udon achieve optimal length, elasticity, bite and taste.

That is, Menyuraku Sanuki Udon Noodle will be given 8 mins while ACE Sanuki Udon will be given a lower limit of 10 mins, even if the recommended time is 10-12 mins.

All together, the result is as follows:
  • Menyuraku Sanuki Udon Noodle --  8 mins
  • ACE Sanuki Udon                       -- 10 mins
  • Aoiyume Kobo Udon                   --  8 mins
  • Topvalu Udon Noodle Sanuki     -- 13 mins
I would love to tell you that although you can control your own time of cooking each of these udon, if you want to follow their recommended time of cooking, then you will have to take the cost of gas into account.

Although Topvalu Udon Noodle Sanuki is the cheapest and ACE Sanuki Udon has the longest dry length, that also mean you will have to use more gas to cook them because they are the longer two.

For ACE Sanuki Udon, you will need to use 25% more gas and for Topvalu Udon Noodle Sanuki, 38.5% more!

Ignoring the 0.2cm difference in their dry length, both Aoiyume Kobo Udon and Menyuraku Sanuki Udon Noodle wins this round!

Round 4 of the battle is the "Stretch" of the udon noodle

The stretch is measured by the cooked length minus the dry length, divide by the dry length multiply by 100%

Stretch = (cooked length - dry length) / dry length x 100%

Using the recommended time in Round 3 to cook each udon and removing them from the hot water at approximately the last second with the help of the timer on my stove, then placing the udon into cold water for about 1 minute before placing them onto a black tray to compare the length, ladies and gentlemen, I present to you...

All together, the result is as follows:
  • Menyuraku Sanuki Udon Noodle -- (26.5 - 20.4) / 20.4 x 100% = 29.9%
  • ACE Sanuki Udon                       --  (29.8 - 24.4) / 24.4 x 100% = 22.1%
  • Aoiyume Kobo Udon                   --  (24.8 - 20.2) / 20.2 x 100% = 22.8%
  • Topvalu Udon Noodle Sanuki     --  (29.8 - 23.3) / 23.3 x 100% = 21.8%
From the percentage, we can tell that although ACE Sanuki Udon is the longest dry udon among the four, it's stretch is just roughly the same as Topvalu Udon Noodle Sanuki and Aoiyume Kobo Udon. What is the most surprising result of all is that the short Menyuraku Sanuki Udon Noodle actually stretches the most by a good 30% from its original dry length.

Given that their dry width and thickness are roughly about the same, Menyuraku Sanuki Udon Noodle really stands out in water absorption. It's one big stick disguises as a needle! So...

Round 5, the final round of the battle, is Edibility! 

This round is subjective, is basically how I felt about these udon when I ate them. You may find the outcome different if you decide to do the same test, but this is my truly unbiased judgement for you as reference.

And the results are,
  • Menyuraku Sanuki Udon Noodle -- elastic, quite chewy, smooth, slightly sticky
  • ACE Sanuki Udon --  more elastic than the first, recoils on breaking, smooth, thick, non-sticky
  • Aoiyume Kobo Udon -- most elastic of all, wheaty, ricey taste, non-sticky
  • Topvalu Udon Noodle Sanuki -- elastic, chewy but wet and gluey
It is not difficult to pick the best if you read my comments, I'll surely pick Aoiyume Kobo Udon as the winner! It simply stands on top of the rest because it is one that actually has some taste as compared with the others which are plain.

But...

if we consider all the factors together, especially the price for what I concern the most as a house chef, I don't think Aoiyume Kobo Udon is worth 35.0 - 58.7% more expensive than the others, so unless it comes with a discount, I will always, I mean always, settle for the others.

So the final question is, which one will I choose to be the winner?

Before I reveal the answer, let me do a quick summary of our current winners.

Frankly speaking, Topvalu Udon Noodle Sanuki is alright for home-cooking. It can never be put on a restaurant bowl because of its stickiness, meltiness and lengthy cooking time, but being the cheapest of all four, I don't see why anyone wouldn't want to buy a packet or two, just to fill the stomach.

Aoiyume Kobo Udon comes with the smallest weight of 200g only, the elegant, premier factor is clear as day. It is the best of all four in terms of taste and it may well be a choice for dining business or high-udon gatherings (from high-tea). With that said, it is not necessary to pay an extra 35.0 - 58.7% more for just that little bit of better taste which will most probably go unnoticed when noodles sauce is added. 

Menyuraku Sanuki Udon Noodle has the longest stretch, a great udon to surprise your friends if they are watching you cook, but how often do we do that? It's nice overall, like its price, it stands in the middle, not too cheap to avoid your dubious look and not too costly to make you back off. The purplish colour on the package got me buying it, and that 270g also places it slightly heavier than the most stuck-up Aoiyume Kobo Udon, telling you that "I'm not Hermès, but I'm also not Coach".

I pick ACE Sanuki Udon as the Winner of Stage 1!!!

I pick it because at a relatively low price of HK$4.98 / 100g and a 10 mins cooking time, it provides the elasticity I would never expect from a long udon, that recoil I got from pulling that noodle was so much fun! It is smooth in the mouth, thick-looking like an udon ought to be (unlike some other one which claim to be udon but felt like noodles) and non-sticky so that it does melt in your mouth to give you that gooey texture.

So...

Technology & Opinions: Why WeChat Will Be Charging / Should Charge You Soon

On Facebook I posted this,

I've made very accurate predictions in the technology world: BYD fell to HK $13, Apple stocks crashed, Samsung thrived, Naver LINE beat Whatsapp, etc. Now I'm going to add one more. WeChat will not be a free app sooner than I think. Wanna know why?

Now I'll tell you why.


So, so what? Well, first, we need to know something. Messi is the 2nd highest earning footballer in the world according to Goal.com's The Goal Rich List 2013, in short, he earns "£251,000 a week, plus bonuses" as well as an "extremely lucrative sponsorship deals with a long-term relationship with the likes of Adidas (worth £2m a year)", just how much do you think it will take Messi to be on a 30 sec ad then? Don't know, but it's not going to be a "friendly" price for sure.

For one thing is that WeChat is owned by Tencent, a Hong Kong-listed Chinese company, and we all know "Chinese" kind of implies "cash" these days, and Messi knows this as much as we do. Thus we can deduce that the cost of hiring him will naturally be much higher than usual.

For another, sometimes even super brand like Adidas cannot get Messi to be in the ad. Don't get what I mean? Check out the video below.


What this video tells us is that you think you were watching Messi in the ad, but in fact you are watching a high school teacher playing football with his friends.

Now, imagine how much more Tencent has to pay than Adidas did to get Messi in the ad in real person. Second highest earning footballer in the world doesn't come cheap. So where should that money come from? Charging the app users would be a reasonable move.

Does Tencent have the money? Sure it has, tonnes, but does WeChat bring Tencent any actual income? Probably, but surely won't be as much as the money Tencent paid for Messi and other artists to promote WeChat.

Tencent definitely enjoys the success of WeChat, rewarding three intermediate-level executives with promotion. Development continues in the upcoming version 5.0 which will include a new online and offline payment function for the account holders to buy transport tickets and top-up mobile phone prepaid cards after purchases relevant services. All seem pretty promising, but at a stock price of HK$305.8, Price-to-Earning (PE) Ratio of 35.24 and an Earnings Per Share (EPS) of HK$8.678 (just 2.84% of the stock price), I'll say that buying it now is a risky business.
