Dining, Travelling & Living: King Ludwig Beerhall -- A Day At Stanley

Stanley Bay
Image from Locky's English Playground
A gorgeous day with cool sea breeze and an azure sky, best for driving and German food. After 30 mins of driving, my family and I arrived at Stanley. It was convenient enough to find free parking space by the roadside as it was a weekday, but the price to pay was some really hot car seats.

Murray House
Image from Locky's English Playground
Stanley is a really beautiful place, a place where modern blends with tradition, the Western blends with the Eastern so naturally that faults are difficult to spot. Take for example the Tin Hau Temple and the Murray House, practically neighbours, do not steal the limelight of one another.

Murry House on the left and Tin Hau Temple straight ahead, food arcade on the right
Image from Locky's English Playground

Palm trees on both sides of a long open path gradually unfolds the main entrance of the Tin Hau Temple.

Tin Hau Temple
Image from Locky's English Playground

It is not grand like the Po Lin Monastery, not gold plated like many temples of Thailand, even the lion statues are not particularly large, but the absence of incense ash and the presence of bright colours which rarely associates with Chinese temples transmit a sense of tidiness and Zen, reflecting the importance of the temple to the villagers of Stanley.

An amazingly obedient golden retriever, waiting for the master outside
a restaurant on the 1st floor of Murry House
Image from Locky's English Playground
With a stomach full of nothing, we made our way to Shop 202, 2/F of Murray House. I have heard the name and quality of this German restaurant from many of my students, but never had the chance to try it out until now.

Indoor panorama
Image from Locky's English Playground
The interior design spares no expense. Every piece of wood, every light bulb and every barrel plays a key to the transformation to this beerhall.

Great atmosphere
Image from Locky's English Playground
Could there be some sophisticated mathematical calculations in the arrangement of the furnitures?

Reserved table
Image from Locky's English Playground
The reserved table really does look like one of those mini-slightly-Viking dining room, and would make a cosy corner for a fireplace dinner gathering with friends and family, but on a fine day, it is probably the last resort.

Beautiful lamps
Image from Locky's English Playground
Then where are the best seats?

View from the balcony
Image from Locky's English Playground
The balcony!!! Where else can you have such an amazing view?

Lager Beer
Image from Locky's English Playground

Onto the food.

King Ludwig's Pork Knuckle
Image from Locky's English Playground

The signatures include this crunchy golden King Ludwig's Pork Knuckle, which is on every table. Despite the wonderful look of it, the skin is way too tough and thick for my jaws, but the meat is tender smooth and lean. The taste is not as vibrant as the Chinese roasted pork, however I suppose the two pork dishes are prepared using the same part of the animal, thus it is not a fair comparison so to speak.

King Ludwig's Pork Knuckle
Image from Locky's English Playground
The fried potatoes side dish was so delicious by the way, so don't miss it. Coleslaw, they were okay.

Sausage Sampler
Image from Locky's English Playground
More fried potatoes made Locky a happy person, sausages sampler on the other hand, tasted like sausages, needless to say.

Creamy buttery potatoes
Image from Locky's English Playground
The sausage sampler also comes with buttery creamy potatoes. If you ask me though, I will save my room of my stomach for the fried ones.

The Boathouse
Image from Locky's English Playground
So that was it! That's all the good food we tried. I am sure there are more, as listed in the official website, nonetheless, we were all too full eating all those potatoes, we couldn't try any more and had to go for a long walk.

Stanley Market Road
Image from Locky's English Playground
The walk was my first in Stanley, as much as I cannot believe myself, having lived in Hong Kong for so many years. The surrounding was pretty, kind of like Paris riverside plus Amsterdam while ruined by red taxis.

Shopping Lane
Image from Locky's English Playground
The shops sell various Hong Kong souvenirs tailored for westerners ranging from surprisingly reasonable to low prices. I was expecting all kinds of rip-off until I was proven wrong with my own eyes! There are garments for sale that even I will consider buying if I were a tourist, impressive!

If you happen to have time in the weekends, do pay a visit to Stanley!

Technology: Fun Facts About Tesla Model S We All Should Know

Tesla Model S
Image from Tesla Motor
Low Maintenance Costs

For many, there are concerns about electric vehicles. Other than the range (distance coverage) and recharge time, maintenance could be a big one.

The truth is, there are far fewer moving parts in a Tesla Model S than a conventional vehicle -- no exhaust pipes, no petrol engine, no clutch, no gearbox to name a few, that the maintenance cost is so so much less.

8 Years Battery Warranty
Image from Tesla Motor

The car battery though, is one new item for many drivers. What if there is something wrong with my battery and I need to get a replacement? That's okay, because first, your battery has 8 years warranty for all models (125k miles for the 60kWh model, unlimited for the rest), so owners will be pretty happy with this length, considering most of the other renowned brands such as BMW and Mercedes Benz offer only 2 years overall warranty.

Hyperspeed Battery Swap

Next, will the servicing take a long time? Our common sense tells us that minimum a week or two is inevitable for the conventional vehicles. What about the Tesla Model S? The battery replacement can be done in less than 90 seconds!!!! Take a look!

Endorsement At Its Best

"I would buy another one in a heartbeat." -- The Owner of the Tesla Model S
involved in the 3rd ever Tesla fire.

Image from Tesla Motor
Calling itself "The Safest Car In America" seems to be a bit arrogant, but they have indeed got the proof for its claim.

3rd Tesla Model S Fire
Image from Tesla Motor Blog
Thus far, there has been three fire incidents for the Tesla Model S, all related to collision with objects on the road.

The most recent one created quite a stir in the industry and questions about its safety slowly surfaced. While non-Tesla EV owners voice out their worries, the Tesla owners are not showing any signs of panic. As a matter of fact, quite the opposite, the Tesla EV owners are in skyrocketing mood about the safety of their beloved car.

The Tesla Model S owner involved in the third fire even wrote a lengthy blog entry arguing that he was in fact being saved by the EV rather than endangered by it.

The following statement is exactly they one in question,

I was driving home from work on the interstate in the right lane at approximately 70 miles per hour, following a truck. In the middle of the lane, there was a rusty three-pronged trailer hitch that was sticking up with the ball up in the air. The truck in front of me cleared the object. I did not have enough time to swerve to avoid the hitch, and it went below my car. I felt a firm "thud" as the hitch struck the bottom of the car, and it felt as though it even lifted the car up in the air. My assistant later found a gouge in the tarmac where the item scraped into the road. Somewhat shaken, I continued to drive.
About 30-45 seconds later, there was a warning on the dashboard display saying, "Car needs service. Car may not restart." I continued to drive, hoping to get home. About one minute later, the message on the dashboard display read, "Please pull over safely. Car is shutting down." I was able to fully control the car the entire time and safely pulled off the left shoulder on the side of the road. I got out of the car, and started to get all my belongings out. About 5-10 seconds after getting out of the car, smoke started to come from the front underbody of the car. I walked away from the vehicle to a distance of about 100 yards. More smoke started to come out of the bottom of the car, and about two minutes after I walked away, the front of the car caught on fire.
I am thankful to God that I was totally uninjured in any way from this impact. Had I not been in a Tesla, that object could have punched through the floor and caused me serious harm. From the time of impact of the object until the time the car caught fire was about five minutes. During this time, the car warned me that it was damaged and instructed me to pull over. I never felt as though I was in any imminent danger. While driving after I hit the object until I pulled over, the car performed perfectly, and it was a totally controlled situation. There was never a point at which I was anywhere even close to any flames.
The firemen arrived promptly and applied water to the flames. They were about to pry open the doors, so I pressed my key button and the handles presented and everything worked even though the front of the car was on fire. No flames ever reached the cabin, and nothing inside was damaged. I was even able to get my papers and pens out of the glove compartment.
This experience does not in any way make me think that the Tesla Model S is an unsafe car. I would buy another one in a heartbeat.
Juris Shibayama, MD

Talking about word of mouth, this has to be as good as it gets. Who on earth will actually tell you he "would but another in a heartbeat" after his previous one caught on fire? If the car isn't THAT good, I doubt no one will. At least I haven't heard any owners of any cars from any other brands who have said the same thing, ever!

Is this the reason why the stock price rebounded 4.89% to USD 144.7?

Cooking: Dad's Pan-fried Drunken Pork (Secret Recipe Leaked!!)

Dad's Pan-fried Drunken Pork
Image from Locky's English Playground
It's Cooking Friday Saturday!

This simple yet scrumptious dish is a huge part of my childhood memory. When I was still a kid living in London, my dad only got to come home once a week, so every time he returned home, he cooked for the family. Since he was a chef at a Chinese restaurant somewhere in Portsmouth, he does have quite a bit of skills when it comes to cooking. Among all dishes he cooked for us in those days, this pan-fried drunken pork is the easiest to cook and top-notch in taste!

This has never been documented before and so this is his secret recipe being leaked for the first time ever in history!

You'll need,
  1. fresh pork (loin)
  2. soy sauce
  3. dark soy sauce
  4. Shaoxin wine
  5. sesame oil

Ceramic knife rocks!
Image from Locky's English Playground
Step 1: cut the pork into thin slices.

Slicing pork in the speed of light
Image from Locky's English Playground
The thickness is for you to choose. Thinner slices means less cooking time but thicker slices is better at juice retention.

The meat is cut
Image from Locky's English Playground
Step 2: Once the pork is sliced, place them in a large bowl or container.

Soy sauce followed by dark soy sauce
Image from Locky's English Playground
Add a generous amount of soy sauce to bring out the taste, and a teaspoon of dark soy sauce to give the colour,

Image from Locky's English Playground
followed by half a cup of Shaoxin wine -- the essence of the drunken pork.

Mixed and marinate
Image from Locky's English Playground
Step 3: Mix well and let the pork marinate for about 2 hours in room temperature or overnight in the fridge.

Cooking starts
Image from Locky's English Playground
Step 4: Use a pan or a wok, cook the marinated drunken pork thoroughly with a small flame or a medium flame.

Why not use a large flame? Because we don't want those heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons created in the process of high temperature cooking like that with a halogen oven. Using large flame for cooking also tends to produce undercooked food because of the shorter cooking time, and undercooking the pork is also not cool, unless you want to have some bacteria and parasites in you, such as staphylococcus aureustoxoplasma gondiicampylobacteriayersinia enterocoliticalisteria and trichinella.

Here's a sidetrack video for those of you who want to learn more about bacon / pork.

Pork 100% cooked
Image from Locky's English Playground
Step 5: Switch to large flame and slightly sear the pork to lower its moisture content.

Image from Locky's English Playground
Step 6: Tuck in! Beware, it is irresistible!

Vocabulary:
scrumptious -- (adj)  (UK informal scrummy) tasting extremely good:
retention -- (n) formal the continued use, existence, or possession of something or someone:

staphylococcus aureus -- a bacterium that is a member of the Firmicutes, and is frequently found in the human respiratory tract and on the skin. Although S. aureus is not always pathogenic, it is a common cause of skin infections (e.g. boils), respiratory disease (e.g. sinusitis), and food poisoning. Disease-associated strains often promote infections by producing potent protein toxins, and expressing cell-surface proteins that bind and inactivate antibodies. The emergence of antibiotic-resistant forms of pathogenic S. aureus (e.g. MRSA) is a worldwide problem in clinical medicine.

toxoplasma gondii -- an obligate, intracellular, parasitic protozoan that causes the disease toxoplasmosis. Found worldwide, T. gondii is capable of infecting virtually all warm-blooded animals. In humans, it is one of the most common parasites; serological studies estimate that up to a third of the global population has been exposed to and may be chronically infected with T. gondii, although infection rates differ significantly from country to country. Although mild, flu-like symptoms occasionally occur during the first few weeks following exposure, infection with T. gondii generally produces no symptoms in healthy human adults. However, in infants, HIV/AIDS patients, and others with weakened immunity, infection can cause serious and occasionally fatal illness (toxoplasmosis)

campylobacter -- Campylobacter (meaning "twisted bacteria") is a genus of bacteria that are Gram-negative, spiral, and microaerophilic. Motile, with either unipolar or bipolar flagella, the organisms have a characteristic spiral/corkscrew appearance (see photo) and are oxidase-positive. Campylobacter jejuni is now recognized as one of the main causes of bacterial foodborne disease in many developed countries. At least a dozen species of Campylobacter have been implicated in human disease, with C. jejuni and C. coli the most common. C. fetus is a cause of spontaneous abortions in cattle and sheep, as well as an opportunistic pathogen in humans.

yersinia enterocolitica -- a species of gram-negative coccobacillus-shaped bacterium, belonging to the family Enterobacteriaceae. Yersinia enterocolitica infection causes the disease yersiniosis, which is a zoonotic disease occurring in humans as well as a wide array of animals such as cattle, deer, pigs, and birds. Many of these animals recover from the disease and become asymptomatic carriers. It infects the host by sticking to the cells of the host using Trimeric Autotransporter Adhesins (TAA).

listeria -- a genus of bacteria that contains ten species. Named after the English pioneer of sterile surgery Joseph Lister, the genus received its current name in 1940. Listeria species are Gram-positive bacilli. The major human pathogen in the Listeria genus is L. monocytogenes. It is usually the causative agent of the relatively rare bacterial disease, listeriosis, a serious infection caused by eating food contaminated with the bacteria. The disease affects primarily pregnant women, newborns, adults with weakened immune systems, and the elderly.

trichinella -- a genus of parasitic roundworms of the phylum Nematoda that cause trichinosis (also known as trichinellosis). Members of this genus are often called trichinella or trichina worms. A characteristic of Nematoda is the one-way digestive tract, with a pseudocoelom (body cavity made up of only an ectoderm and endoderm).

tuck in -- UK informal — phrasal verb to start eating something eagerly:
irresistible -- (adj) impossible to refuse, oppose, or avoid because too pleasant, attractive, or strong:

Food: Yan Wo Dou Bun Chong (The Best Tofu Fa!!)

Want to go "meat-less" for a meal? Here's a great choice
Image from Locky's English Playground
Between jobs in the evening, I searched for my next meal as usual. I did not feel like having too much meat though, so I pondered over the limited choices as the raining kept falling on my head. I tried to think hard, but  my legs had already taken me to where I should go.

Renovated about a year ago
Image from Locky's English Playground
Within a short period of time, I found myself at Yan Wo Dou Bun Chong, a bean product shop at 15 Canal Road West, Wan Chai -- an old friend. I used to visit this shop pretty often when I was teaching in a secondary school nearby for the last 5 years, and because of that, I do know a staff or two who can speak English. This time round, the familiar faces were not there, so I had to seek the help from the menu.
Image from Locky's English Playground
Ordering is not at all difficult, just point your fingers at the numbers listed on the menu, what was warmly surprising was that the old lady who took my orders understood my English and repeated my orders in English!!!
Image from Locky's English Playground
The food came in a flash and I was delighted to see that the orders were correctly placed! It is definitely rare to find an old lady who has such English ability in Hong Kong, I am simply impressed!

The Iconic Trio
Image from Locky's English Playground
I ordered what are dubbed to be "Iconic Trio" -- hot tofu fa, fried noodles and pan-fried tofu with fish meat, for these three yummy dishes are ever present on every table.

Fried noodles
Image from Locky's English Playground
Fried noodles are commonly found in small congee restaurants, I like this one best because the taste of the fried noodles is not overwhelmed by soya sauce, and I adore the dried bean curd slices that go with the bean sprouts. Most importantly, unlike what I often get from other shops, the noodle is hot when it arrives!

Hot tofu fa / Soya bean custard
Image from Locky's English Playground
Some like cold tofu fa, but if you are an expert you know only the hot ones can provide the actual aroma of the beans and the true texture to reveal the skill of the tofu fa maker. It is a hell of work to produce extremely smooth tofu fa that is at the same time elastic -- soaking, washing, measuring, blending, filtering, hard-boiling, "crashing" (that is the pouring of soy milk with coagulant) then warming. Most shops can produce tofu fa in its form, but no shops I have visited so far are able to have its tofu fa unbroken when hold by at the edge of a spoon. Other than my mum's home-made tofu fa, only this shop can. Too bad I did not take a photo of this amazing quality, I'll make up for it next time.

Pan-fried tofu with fish meat
Image from Locky's English Playground
Pan-fried tofu? Freshly made, burning hot at delivery. Crispy skin, mellow deep within; taste of rich soy bean in every bite. The fish meat is really unnecessary, the protagonist has always been the tofu itself. Good news for the health-conscious group, the piece of paper helps to reduce the oiliness quite a bit.

Sauces, salt and pepper
Image from Locky's English Playground
To make it taste even better, I have always like to add a little sweet sauce and loads of chili bean sauce. I do not know the chemistry behind this but it just spices things up another notch once they are added.

Finally, although there are several shops from this company, I will only go to this one. The reason being? It's tidy and hygienic, new tofu products made are almost instantly consumed by the hungry crowd of tofu fans! I have visited another Yan Wo Dou Bun Chong shop in Mongkok which is by the road side, there was dust and dirt in the bowl!! How horrifying!

This one in Causeway Bay has got to be the best!

Vocabulary:
trio -- (n) [C, + sing/pl verb] a group of three people or things:

Games: Double Dragon Trilogy Is BACK!!!

See that iPhone behind the title?
Image from gamezone
I think this one definitely deserves one post of its own. The Double Dragon Trilogy!!!! Our wasted youth is back!

All those street rage, fist-fights, whip-slashing and bat-whacking, together with that classic MIDI music, Double-Dragon is truly the God-father of all combat games such as Street of Rage and Street Fighters.
Image from blogcdn

Then again, it was really hard to play as far as I remember, it was 2D but it was frustrating to play near the end of the story, only once had I got to the final boss of Double Dragon 1 on the Nintendo.

That's why I have always liked the arcade version better, when two people can play as Billy Lee and Jimmy Lee and start beating up gangsters at the same time on the same screen! Well, those teamed-up moments are coming back! Very soon, we will be able to play this game on iOS and Android phones and we can play the game together with your best fighting buddy!

Rumour has it that this game will be out this year, which means very soon! If you are kind of my age, you will surely be keeping an eye on it! Am I right or what?

Vocabulary:
wasted -- (adj) wasted time, money, etc. is time, money, etc. that is not used effectively because it does not produce the result you wanted:
rage -- (n)[C or U] (a period of) extreme or violent anger:
whip -- (n)[C] a piece of leather or rope that is fastened to a stick, used for hitting animals or people:
Remember that whip in Iron Man 2?
Image from squarespace
slash -- (vb) [I or T] to cut with a sharp blade using a quick, strong movement:
bat -- (n)[C] a specially shaped piece of wood used for hitting the ball in many games:

whack -- (vb) [T] to hit someone or something noisily:

Culture & Vocabulary: Popular Names & Origins Of Words

Popular Boy's Names
Image from The Atlantic
When a baby is born, they have got to have a name. In the old days, people searched books, asked friends, called their English teachers. Now, we search through the web. Have you ever wondered what names was popular in a certain year in the past? Deadspin's Reuben Fischer-Baum took data and developed colour maps showing the popularity names by States from 1960s through 2012. See the GIF above for boy's names and below for girl's names.

Popular Girl's Names

The Atlantic has quoted some summaries of the trend illustrated in the GIFs above, so feel free to read them up in the links given in the Resources section below. For me though, I'd like to think what is the first person that comes to my mind when I see these names. Here is a list of people who popped out.

Names and words are fun to look at sometimes, and I guess the Chinese netizens will agree with me. Take for example, the word "Tuhao", meaning "newly rich" or "nouveau riche" in French, has caught the attention from the West and earned the making of a short video by BBC!

Cool, huh? How about doing a little more research to see what names and words are trending?

There is another article talking about the origins of the word "Dude", but I'm not too keen on discussing that. No harm to take a look though. What's the Origin of the Word "Dude"? @ Mental Floss
